Barbacoa grows with fresh spin

Even though a large Mexican fast-food chain is advertising barbacoa-style beef as a new item, Barbacoa is an old favorite for many diners in the Salt Lake Valley.
The word "barbacoa" is used to describe slowly cooked meat. It is also the origin of the word barbecue. At Barbacoa Mexican Grill, a restaurant soon to have five locations in the valley, it is a recipe for fresh, healthy food with a kick.
"We are a little bit different, and we're proud to be different," said Tyson Cichos, president of the restaurant chain. "We have an active clientele who like their food fresh with lots of variety."
Since starting out in Holladay in 1998, the restaurant has attracted a loyal fan base. Company officials' commitment to thoroughly marinated and slow-cooked meats has allowed it to expand.

US government settles on design for new nuclear warhead

WASHINGTON: The Bush administration is taking a major step toward building a new generation of nuclear warheads by selecting a design that is being promoted as safer, more secure and more easily maintained than today's arsenal.

A team of scientists from Lawrence Livermore National Laboratory will continue with designing the weapons design in anticipation of having the first warheads ready by 2012 as a replacement for Trident missiles on submarines.

The new weapons program, which has received cautious support from Congress, was immediately criticized by some nuclear nonproliferation groups as evidence the government wants to expand nuclear weapons production, not move toward eliminating the stockpile.

Critics also maintain that it sends the wrong signal around the world by pushing a new warhead, although characterized as a replacement for existing ones, at a time the United States is trying to curtail nuclear weapons development in North Korea and Iran.


Employees, residents feel loss of Giant Eagle

The last day of business at Giant Eagle in University Plaza was a quiet one. Many shoppers had taken advantage of the discounted items in the past week as the shelves were mostly bare.

Although Friday was the last day, Giant Eagle employees were still hesitant to voice their opinions.

"I'd rather not comment," one employee said.

"I don't have anything nice to say," another said.

The store closing came as a surprise to employees and residents when the announcement came two weeks ago without notice.

Councilman Wayne Wilson, whose ward includes the area, said he didn't know Giant Eagle was closing until a Record-Courier reporter called him Feb. 9.

"The supermarket is a big drawing card to the plaza," Wilson said.

Fifty-fourth annual ice fishing contest

Recently there was a television feature about the 10 places in the country that everyone should see. Yellowstone Park was near the top with one of its most famous sights Old Faithful, the world's greatest geyser.

We had our own geyser back in 1953. Every year, the Dunn County Fish & Game Club finds ways to improve by holding an ice fishing contest on the second Saturday in February on Lake Menomin. At that first contest, members were reminded that putting too much weight on the surface of a frozen lake will cause an eruption.

The circular fishing area surrounded with Christmas trees, hundreds of vehicles and the bodies of hundreds of anglers combined to put enough pressure on the ice to cause an "Old Faithful," a very cold column of water that did everything but steam like the famous geyser's boiling waters.


Cheers' Cliff Laces Up Dancing Shoes

John Ratzenberger, best known for playing affable mailman Cliff Claven on Cheers, has stepped in to replace Vincent Pastore on Dancing with the Stars after the show's physical demands proved too much for the Sopranos star.

Producers had previously invited the 59-year-old actor to appear on the ABC show earlier this year, but he was unable to commit at the time, due to a scheduling conflict.

Having apparently cleared his calendar since, Ratzenberger joins the series with the added challenge of having only three weeks to hone his dance moves before the premiere, versus the four weeks other competitors had to prepare.

Ratzenberger's professional dance partner will be Edyta Sliwinska, who was partnered with Joey Lawrence last season and is the only pro to have appeared on all four seasons.
