How the new environmentalism is replacing religion

In 1943, American psychologist Abraham Maslow published his theory of human motivation. Almost 65 years later, Maslow's model remains a reliable guide for understanding why individuals think and behave as they do. If you want to make sense of the world, carry a copy of Maslow's theory in your wallet.

La Casita piles on the tamales

We adore fine dining. There's nothing like sitting comfortably, quietly sipping pinot noir and savoring edible art with myriad flavor and nuances. The portions are often modest, but the pricey mouthfuls are usually sigh-worthy.

Then there's yummy, belly-patting, m-m-m-m-good food you eagerly shovel in your mouth because it's so tasty.

We do not ponder whether the plate is half full, or half empty. These platters are piled, overloaded perhaps, with great, cheap fare that hits The Spot.

Those are the kind of fine, memorable happy-mouth meals we love to eat at Tamales by La Casita.

If you're a tamale fan like us, you've eaten the steamed, corn-husk-wrapped delights handmade by Denver's Sandoval family for the past three decades. You may have sampled them at any of the dozens of local Mexican eateries they supply with tamales or at their Invesco Field booth.

SWAZILAND: Community gardens flourish to feed the vulnerable

MBABANE, 1 March 2007 (IRIN) - NGOs in Swaziland are shifting the emphasis of their operations from handouts of donated foodstuffs to training households and communities to set up projects that produce food and generate income, to find a lasting solution to perennial food shortages.

"Year after year the food crisis continues, with no end in sight. Before donor fatigue sets in, we need to encourage people to take control of their own food security," said Chris Dlamini, public relations officer for the Baphalali Red Cross Society.

Abdoulaye Balde, Swaziland Country Representative for the World Food Programme outlined the new approach. "People must take charge of their food needs. Food relief will continue in emergency situations, but we need to teach people about drought-resistant crops and encourage home cultivation."

AGAINST THE ODDS

In Manzini Region in the west of the country, Nomcibelo Dlamini arrived at a Red Cross food security centre carrying her prized exhibit: a full, lush head of lettuce.

Campus Services projected to lose $6.7M

The University of Cincinnati's Campus Services was projected to lose $8.9 million this year, but increased revenue and cost saving measures, including payroll cuts, have lowered the budgeted deficit to approximately $6.7 million.

Steve Sayers, senior associate vice president for Campus Services, made the announcement at Wednesday night's Student Government meeting. Campus Services' budget for fiscal year 2006-07 was around $56 million, according to Sayers, which included the almost $9 million loss. The budget is made up of eight units including debt payments, utility costs, payroll, operating costs and house keeping and maintenance.

"This deficit was planned, we knew MainStreet was not going to make money right away," Sayers said. "But the university's situation put the onus on us to get our house in order more quickly than planned."

According to Sayers, Campus Services is about $2 million above its original budget.

Comfort food without the high calorie count

In a food popularity contest, macaroni and cheese would be one of the winners. Kraft reports that it sells more than 1 million blue boxes of the stuff every day. But because it's so high in fat and calories, macaroni and cheese wouldn't win a blue ribbon from dietitians.

One cup of Kraft macaroni and cheese has 410 calories and 18 fat grams – and those numbers pale in comparison to some made-from-scratch versions. Celebrity chef Emeril Lagasse's recipe contains 550 calories and 31 fat grams per cup.

That's cold comfort for people who want to eat healthier.

But if you make a few adjustments to a typical recipe, you can keep this dish on the dinner table and still lose weight.

This recipe is adapted from Cooking Light.

Instead of regular macaroni, use Barilla Plus, a multigrain pasta.
