In a food popularity contest, macaroni and cheese would be one of the winners. Kraft reports that it sells more than 1 million blue boxes of the stuff every day. But because it's so high in fat and calories, macaroni and cheese wouldn't win a blue ribbon from dietitians. One cup of Kraft macaroni and cheese has 410 calories and 18 fat grams – and those numbers pale in comparison to some made-from-scratch versions. Celebrity chef Emeril Lagasse's recipe contains 550 calories and 31 fat grams per cup. That's cold comfort for people who want to eat healthier. But if you make a few adjustments to a typical recipe, you can keep this dish on the dinner table and still lose weight. This recipe is adapted from Cooking Light. Instead of regular macaroni, use Barilla Plus, a multigrain pasta.
Kraft cuts Dairylea fat and salt
Food giant Kraft has said its Dairylea snacks aimed at children have been made healthier by cutting the amount of fat and saturated fat in Lunchables. Fats are being cut by about one third and the salt content is being reduced by about 9%. Dairylea products had been criticised by health campaigners who complained about Lunchables' high salt content. Kraft said revamped Lunchables had no artificial colours, flavours, or trans fats, and 113% more fibre than before. The firm said in a statement: "New recipe Dairylea Lunchables is one example of how Kraft Foods is working with consumers to help them make healthy choices more easily." Consensus Action on Salt and Health (Cash) welcomed the move but said a chicken sandwich without cheese would contain about 0.64g salt, which it said is about a third of the salt content of the Ham 'n' Cheese Sub Lunchable.
Angel Food Ministries helps feed the family
Spend $25 before Feb. 11 at any of four local churches, and you can collect between $50 and $65 worth of groceries Saturday, Feb. 24. Sound too good to be true? Not this time. The churches, First United Methodist Church, Kingsbury Baptist Church, Second Baptist Church and Living Waters Worship Center, are participating with Angel Food Ministries, an 11-year-old, Georgia-based, non-denominational outreach program, which provides food to more than half a million families each month in 32 states. The program is coordinated in this region by Pastor Lynn Beams of Prevailing Word Church in Lytle, who acknowledged that Angel Food Ministries offer might not be believable to those new to the program and its work. The first thing people think when they see that much for that little is that theres got to be something wrong with it, and thats just not the case, Beams said.
Huber on back burner
Siting a new Huber/AODA work release jail and treatment facility has officially been temporarily shelved by the Dane County Board. The board voted overwhelmingly Thursday night to suspend siting plans for the proposed $34 million to $38 million combined work release jail and alcohol and drug abuse treatment center, so county officials can take a second look at it, in case a smaller building would be more appropriate if the county streamlines the local Huber program by going to electronic monitoring of minimum-security inmates. County Executive Kathleen Falk supports suspending the current siting plan so another look can be taken at the criminal justice system in Dane County by all the stakeholders involved, including the circuit judges, the sheriff and the district attorney.
Food Network Signs Hispanic TV Star Ingrid Hoffman
Ingrid Hoffman, host of cooking and lifestyle show Delicioso on Univision and contributor to Univision's Despierta America, has signed a multi-year deal with the Food Network. "Ingrid has a loyal and passionate following in the Hispanic community," said Bob Tuschman, senior VP of programming and production for Food Network, in a statement. "Her love of food, flair for easy entertaining, along with her inviting personality, is sure to draw a new legion of fans to our air." .
Local chef heads to New York
Rob Stoeckle began his culinary education in the kitchen of his parents' Park Hills home. Starting with the basics, including meatloaf and mashed potatoes, he progressed to dishes such as red curry thai and salmon filets over salad. Now Stoeckle is hoping to expand his knowledge after being accepted into the Culinary Institute of America (CIA), considered to be one of the world's premier culinary colleges.
