Comfort food without the high calorie count

In a food popularity contest, macaroni and cheese would be one of the winners. Kraft reports that it sells more than 1 million blue boxes of the stuff every day. But because it's so high in fat and calories, macaroni and cheese wouldn't win a blue ribbon from dietitians.

One cup of Kraft macaroni and cheese has 410 calories and 18 fat grams – and those numbers pale in comparison to some made-from-scratch versions. Celebrity chef Emeril Lagasse's recipe contains 550 calories and 31 fat grams per cup.

That's cold comfort for people who want to eat healthier.

But if you make a few adjustments to a typical recipe, you can keep this dish on the dinner table and still lose weight.

This recipe is adapted from Cooking Light.

Instead of regular macaroni, use Barilla Plus, a multigrain pasta.


Banks County man joins peanut butter lawsuit

A team of attorneys, already working on other salmonella food poisoning cases in Georgia, filed a lawsuit this week on behalf of a Banks County man who became ill after eating peanut butter.
Billy Duren of Homer, reportedly required medical treatment and hospitalization after he experienced extreme nausea, diarrhea, vomiting, and abdominal pain as a result of eating Peter Pan and Great Value peanut butter.
The suit was filed against ConAgra Foods, Inc., the manufacturer of Peter Pan and Great Value peanut butter that has been linked to a salmonella outbreak that has affected people in 39 states. All of the peanut butter in question was produced at ConAgra’s factory in Sylvester, Georgia, which is under investigation by the FDA.

MY WILTSHIRE LIFE

SARAH Allen, 43, is the station commander at Trowbridge Fire Station. She has lived in Wiltshire on and off since she was nine, and took on a wide range of roles before joining the Fire and Rescue Service.

After leaving school she trained in the restaurant business and worked in London, then in the early 1990s spent two years travelling round the world including six months living in the Philippines and six months in Australia. On returning to Wiltshire she took a job as a cook/housekeeper in Devizes and joined the Fire and Rescue Service as a retained firefighter in 1997. A year later she joined full time. Mrs Allen has two step-children and lives with her husband Brian in Devizes.

Tasty chicken you 'un-fry'

On average, consumers say they eat chicken five times in a two-week period, according to a 2006 National Chicken Council survey. Other research finds that fried chicken has been the fastest-growing fast-food menu item over the past decade.

No doubt it's popular, but fried chicken is far from healthful. A five-piece order of McDonald's Chicken Selects contains 630 calories and 33 grams of fat.

A more nutritious alternative is "un-frying" breaded chicken in the oven, but it can be tricky to find a method and recipe that mimics fried chicken.

I experimented with several recipes, then mixed and matched some of the tips and ingredients to come up with "un-fried" chicken that made my junk-food-loving taste buds happy.

My version is based on a recipe by Rosie Daley, former chef to Oprah Winfrey.


LPD-17 San Antonio Class: The USA's New Amphibious Ships (updated)

LPD-17 San Antonio Class amphibious assault support vessels are a new class of ship which is just entering service with the US Navy. Much like their predecessors, their mission is to embark, transport, land, and support elements of a US Marine Corps Landing Force. What changes are the capabilities and technologies incorporated to perform that mission, including internal technologies as well as accompanying platforms like the V-22 Osprey and Expeditionary Fighting Vehicle.

Navy sources note that the 9 scheduled ships of this class (reduced from 12) are slated to assume the functional duties of up to 41 previous ships. These include the USA's older LSD-36 USS Anchorage Class dock landing ships (all decommissioned as of 2004, LSD-36 and LSD-38 transferred to Taiwan) and its LPD-4 USS Austin Class ships (12 built and serving, LPD 14 Trenton now India's INS Jalashva).

Smoke Out Delivery Dude for Fast Food

A knock on my door usually means one of two things: Either the Chinese food delivery man finally found my address, or my dealer wants to show off the latest Big Buddha strain he just got off some bro downtown for hella cheap. But unless Hermes is also sporting bloodshot eyes, I feel rude answering the door with a cloud billowing out of my living room. Smoking etiquette requires a sesh with my dealer for sure, but every time I'm handed my Kung Pao chicken, I wonder if a Trainwreck spliff would trounce my measly tip.

Once in a while, some mad dasher from Domino's will give my roomies and me a "Smells good in here" or a "Looks like I got here just in time." I used to just neglect the small talk for what it was worth, but I've come to understand how easy it is to include your meal ticket into the rotation.


Total Pig: Whole Foods Gets Bigger

On Feb. 21, Whole Foods made the unexpected announcement that they would buy rival Wild Oats, and my e-mail inbox overflowed with twitter and chatter from foodies near and far. Normally, I dont follow the fortunes of Fortune 500 companies, but this case is a little different. In fiscal year 2006, Whole Foods sold $5.6 billion worth of arugula, goat yogurt and fair trade coffee through about 200 stores in the US, Canada and the UK. Wild Oats sold $1.2 billion through about 100 stores in the US and Canada. No matter how much youve spent in either store in the past year (fiscal or regular), it may seem difficult to care which giant corporate entity gobbles up the other, but this news certainly means things will change here in Santa Fe, maybe for better and maybe for worse.
