A knock on my door usually means one of two things: Either the Chinese food delivery man finally found my address, or my dealer wants to show off the latest Big Buddha strain he just got off some bro downtown for hella cheap. But unless Hermes is also sporting bloodshot eyes, I feel rude answering the door with a cloud billowing out of my living room. Smoking etiquette requires a sesh with my dealer for sure, but every time I'm handed my Kung Pao chicken, I wonder if a Trainwreck spliff would trounce my measly tip. Once in a while, some mad dasher from Domino's will give my roomies and me a "Smells good in here" or a "Looks like I got here just in time." I used to just neglect the small talk for what it was worth, but I've come to understand how easy it is to include your meal ticket into the rotation.

In previous columns we have discussed the extremely high rate of periodontal disease in pets. We discussed the four grades of severity of periodontitis. Grade 1 is easily cleanable at home. Grade 2 requires anesthesia for adequate cleaning because of ongoing injury to live tissue. This translates to too much pain and fear to accomplish the needed work in dogs and cats without anesthesia. Grade 3 periodontitis means there is significant loss of tissue supporting the teeth. At this point some teeth are likely to require extraction. Grade 4 periodontitis is root abcessing, requiring extraction of all affected teeth. Anesthesia seems to induce fear in pet owners and sometimes in veterinarians as well. Anesthetic safety can be accomplished even in elderly pets with the use of the tools we have available for diagnosis and treatment.

The Standex Cooking Solutions Group will be led by Hylton Jonas and will include the BKI, APW Wyott, Bakers Pride and BevLes businesses. BKI produces heating and holding equipment, including combi-ovens, pressure fryers, rotisseries and hot cases.
Meatloaf, Mexican style
Cynthia Lehr of Tequesta, Fla., used to have a recipe for Mexican Meatloaf and has had trouble finding another one she likes as much. Madeline Fossey of Cape May, N.J., sent a recipe for a Mexican-style meatloaf that she and her family really enjoy. This meatloaf is a cinch to prepare and quite delicious. While I tested the recipe using all ground beef, ground turkey or a mixture of the two could be substituted for a more healthful alternative. I recommend serving it with mashed potatoes or Spanish rice and a green vegetable. You will have a tasty twist on an old-fashioned comfort food in no time. MEXICAN MEATLOAF 1 1/2 pounds ground beef or ground turkey one 6.8-ounce package Spanish rice 1 egg, lightly beaten 1 14.5-ounce can diced tomatoes with jalapeos one 8-ounce package shredded Mexican four-cheese blend (divided use) 1 or 2 jalapeo peppers, minced (optional) Preheat oven to 375 degrees.

Fighting world hunger
Fire in barrels, cardboard hovels, tens of thousands of paper clips linked together and 30 hours without food helped teens at All Saints Lutheran Church come to a deeper understanding of hunger and homelessness. To raise money for World Vision, a Christian relief organization, All Saints youth went without food for 30 hours last weekend. World Vision estimates that about 29,000 children die every 30 hours because of malnutrition and starvation. One of the projects of the All Saints overnight fast was to link 29,000 paper clips into a chain to help the teens grasp the magnitude of that number. The 11 youth who participated raised $1,300 for World Vision, an amount that will be matched by other donors, said All Saints Pastor Keith Cook. "It's pretty amazing what can be done," Cook said.
Have fun and experiment when learning to pair wine and food
PAIRING WINE and food seems to be a confounding element of wine appreciation for many people. What would seem to be a natural fit can give even the most adventurous palates anxiety . It certainly doesn't have to be this way. With a few basic guidelines and a little experimentation, you will be able to pair meals with ease. People may be surprised to hear this, but flavor is not the top factor I use in pairing wine and food. The first criterion I consider to be important is acidity. Think of squeezing a lemon over your food. The lemon imparts flavor, of course, but it's the acidic kick that brings out the flavors in the food and provides a balance to the fat and starch. Wine does the same thing. Acid is present in white, red and rose wines, and it is important to pick a wine whose acidity has not been artificially reduced (or at least too much).
