Tony Darden knows all about Shrove Tuesday

The 73-year parishioner of Grace Episcopal Church in Radford has been a regular at the congregation's annual Shrove Tuesday pancake supper since age 6.

For about the last 50 years, he's been a fixture.

In the late 1950s, Darden and a couple other men of the church assumed responsibility for the Shrove Tuesday event when the women of Grace Episcopal elected to stop cooking.

"They took the recipe and tore it up and they quit," said Darden, 79.

Darden, who presided over the church's 104th annual pancake supper this week, has been the go-to person ever since.

That means ensuring 60 pounds of sausage, 13 gallons of milk, 6 pounds of pancake mix, 5 gallons of syrup and 7 pounds of butter are in place and waiting to be mixed on the morning of the event.


Vegetables with lemon thyme vinaigrette

Diagonally slice the carrots, cut the broccoli into florets and thinly slice the zucchini. Cut each vegetable into even-sized pieces so they will cook at the same rate. Use a small sharp knife to cut a cross in the stems of the broccoli - this will help microwaves penetrate them easily, cooking the stems without overcooking the flowers. Wash the vegetables and leave the water clinging to them (in most cases, the water that clings to vegetables after washing is all that's needed during cooking). When cooking in the microwave, you need to use a dish that is microwave safe. To check if a dish or plate is microwave safe, place a heatproof microwave-safe coffee cup containing 185ml (3/4 cup) water on the centre of it and heat, uncovered, on High/800watts/100% for 1 minute. If the dish is cold and the water is warm, the dish is safe to use.


Frozen tomatoes bring freshness to pasta sauce

Even with summer so far away, Annette Guilfoyle captures the taste of succulent homegrown tomatoes in her homemade roasted tomato pasta sauce, which she freezes, then uses all through the year.

"It freezes great, and I always have some on hand for winter meals," said Annette, of southeast Grand Rapids.

Rich with roasted tomato flavor, the sauce is infused with onion, garlic and fresh Italian herbs.

"I'm very much into using whole foods as much as possible, and this sauce has lots of flavor and texture," Annette said. "That's what makes it taste so summery."

Annette roasts whole tomatoes in the oven along with a full head of garlic, onion and a green bell pepper, all drizzled with olive oil. "Just sprinkle with sea salt and freshly ground black pepper," she said.


Elderly may be eligible for SAFE program

If you are on Supplemental Security Income (SSI), and are at least 60 years old, you may qualify for the Simplified Assistance for the Elderly (SAFE) Program.

SAFE is a six-year project that seeks new ways to deliver food assistance to elderly SSI households. It is a simplified version of the Food Stamp Program; many Food Stamp Program rules do not apply, and SAFE has no reporting requirements.

Kentucky Cooperative Extension Service and the Kentucky Department of Community Services are working together to get the word out about this new program that can enhance the nutrition and health of participants. It is estimated that 19,000 people in the state are eligible for the benefit.

Pork steaks with spinach pilaf

Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring, for 5 minutes or until soft. Add the cardamom, cinnamon, saffron and rice, and cook, stirring, for 2 minutes or until aromatic. Add the stock. Cover and bring to the boil. Reduce heat to low and cook, tightly covered, for 15 minutes or until all the liquid is absorbed. Sprinkle the rice mixture with the spinach and currants. Cover and remove from heat. Set aside for 5 minutes to rest. Meanwhile, heat a large non-stick frying pan over high heat. Spray pork steaks lightly with oil. Cook the pork for 2-3 minutes each side or until brown and just cooked through. Sprinkle pilaf with almonds. Use a large metal spoon to gently fold the almonds, spinach and currants through the pilaf. Divide the pilaf evenly among serving plates.

This morning, Nickelodeon and MTVN Kids and Family Group President, Cyma Zarghami, joined the President and Mrs. Bush, along with other food and beverage industry and entertainment executives and CEOs, the Ad Council and the Secretary of the U.S. Department of Health and Human Services (HHS) at the White House to discuss the current effort towards the fight against childhood obesity.

The meeting stemmed from the recent announcement by HHS, the Ad Council, Dreamworks SKG, Nickelodeon, and others about the launch of a new series of public service advertisements designed to help prevent childhood obesity featuring characters from the movie SHREK. Nickelodeon will premiere the SHREK "Be A Player" PSA on February 1 at 8 p.m. ET/PT and air it throughout the year as part of the network's on-going "Let's Just Play" campaign, which strives to encourage kids and families to make healthy lifestyle choices.
